Broccoli Cheddar Soup

- 1 head broccoli
- 1 carrot grated
- 1 cup heavy cream
- 2 tablespoons butter
- 1 cloves garlic minced
- salt and pepper to taste
- 1 cup cheddar cheese shredded
- 2 1/2 cups vegetable or chicken broth
- 1 potato diced
In a large pot, melt the butter over medium heat. Add the minced garlic and sautéfor a few minutes until fragrant.

Add the vegetable or chicken broth and bring to a simmer.
Add the chopped broccoli, potato, and grated carrot to the pot. Cook for about 25-30minutes, or until the broccoli is tender.
